Gingerbread Cookies - Christ Church recipe

Opposite the entrance to the Tower of David Museum you can find Immanuel Christ Church - the very first Protestant church in the Middle East (!). It was established in 1849 and has held a yearly festival for Christmas ever since. We crossed the street to find out what they are eating in Jerusalem for Christmas and found the church staff wearing aprons and baking and decorating gingerbread men cookies. It all started 13 years ago when the church pastor and his wife decided to celebrate Christmas in a homey atmosphere. Together with the church staff, they made mulled wine and baked and decorated gingerbread men cookies; and because they had so much fun, they made the cookie baking a tradition! Every year before the holiday, a staff of volunteers from abroad, who live in the complex, decorate the church with Christmas decorations and bake thousands of cookies for the enjoyment of visitors. Here is their recipe for you:


Gingerbread Cookies:
¾ c brown sugar (245 g)
½ c butter (100 g)
1 egg
¼ c molasses
2 ⅔ c flour (350 g)
2 heaping tsp of ginger powder
1 tsp baking soda
½ tsp cinnamon, nutmeg and salt

In a large bowl, mix butter and sugar. To the sugar mixture, add egg and molasses. Add flour, ginger, baking soda and other spices until the batter is uniform. Let dough rise for about 30 minutes in the refrigerator. Roll out dough and cut out cookies in various shapes.

Bake for 12 minutes at 180/360 degrees – but check after 10 minutes to see if they are done – when they don’t stick to the pan and can be lightly moved. Remove from the over, let the cookies cool and then decorate.

For decoration - prepare royal icing: whip one egg white with 250 g powdered sugar and 1 tsp grated lemon. Whip together until the egg whites are firm and begin drizzling creatively :)
